My Favorite Chicken Soup Recipe

In the autumn when we are working in the yard and garden I will start a pot of chicken soup in the morning and let it simmer on the stove all day.  Throughout the day the aroma will carry and will make us work faster to get the yard clean-up done so we can have a hot bowl of soup. A hearty bowl of soup at the end of the day is comforting.

One of my favorite soup recipes is a chicken with red curry paste soup.  Let me start by saying that this is no ordinary chicken soup.  

One bowl of this flavorful chicken soup will fill you up.  

I start with a basic chicken stock and then add whatever I can find in the cabinets and refrigerator. Sometimes I use fresh vegetables other times frozen. I will add rice or egg noodles to the chicken stock and red curry paste, lemongrass, lime juice and diced chicken breast.  

This recipe calls for a lot of chicken.  Then I will add fresh herbs from my culinary garden, plus sea salt and black pepper to taste.

If the weather is going to be cold or rainy then I will make my list for the chicken Thai curry soup and off to Asian market I will go to buy the ingredients for the soup.
I like the chicken Thai curry soup with a side salad with peanut dressing and with a slice of freshly baked grain bread or a crusty banquette.   My husband needs the bread to wipe the soup bowl clean.

About the red curry paste...don't fear the heat.  You can make this recipe mild medium or hot…by adding more or less curry paste. Oh and by the way the kids like this soup too.

For day to day cooking and special occasions my husband is behind the stove.  That is not to say that I do not cook.  I am what you call a comfort food cook.  Many of the recipes that I make come from my mother’s cook book.  I enjoy making soups, stews, casseroles and baked goods; desserts and bread.
